Grilled Chicken Down Under Wings Recipe

Quick, easy and seriously moreish. These juicy chicken wings are generously seasoned with our Backyard Chicken Down Under Rub, grilled until beautifully golden and finished with a sticky honey butter glaze. Sweet, savoury, buttery and messy – exactly how good wings should be.

Ingredients

1kg chicken wings
50–60g Backyard Chicken Down Under Rub

For the honey butter glaze:
75g salted butter
3 tbsp runny honey
1 tbsp Backyard Chicken Down Under Rub

Method

1. Prepare the wings
Pat the chicken wings dry with kitchen paper and place them into a large bowl. Removing as much surface moisture as possible will help the wings develop a better colour and slightly crispier skin on the BBQ.

2. Season
Toss to coat or simply add them to a sealable sandwich bag for an overnight marinade.  Generously sprinkle over the Backyard Chicken Down Under Rub and mix thoroughly until every wing is evenly coated.

Leave the wings to stand for around 10–15 minutes while you prepare the BBQ.

3. Prepare the BBQ
Set your BBQ up for medium-high heat. Ideally, create two cooking zones so you have a hot direct side for colour and an indirect side where you can move the wings if they begin cooking too quickly.

4. Grill the wings
Place the wings onto the BBQ and cook for approximately 20–30 minutes, turning regularly so they cook evenly and develop a beautiful golden, slightly charred exterior.

Move the wings between the direct and indirect heat as required to prevent the seasoning from burning.

I personally do this with my hands but wearing rubber gloves for speed.

5. Check the temperature
Check the thickest part of the wings with a meat thermometer, making sure the probe isn't touching the bone. The chicken must reach an internal temperature of at least 74°C before serving.

6. Make the honey butter glaze
While the wings are finishing, gently melt the butter in a small saucepan. Add the honey and Backyard Chicken Down Under Rub and stir until everything is combined into a smooth, glossy glaze.

Keep the glaze warm without allowing it to boil.

7. Glaze the wings
Once the wings are fully cooked, transfer them to a large bowl. Pour over the warm honey butter glaze and toss until every wing is generously coated.

For an extra sticky finish, return the glazed wings to the BBQ for another 1–2 minutes, watching them carefully as the honey can catch quickly over high heat.

8. Serve
Pile the wings high onto a serving board or platter, drizzle over any remaining honey butter glaze and serve immediately.

Then grab plenty of napkins and get stuck in.

Backyard Tip

Don't add the honey butter glaze too early. The sugars in the honey can burn over high heat, so get your wings beautifully cooked first and glaze them right at the end.
